Ingredients:

  • 200g of green lentils
  • 150g of cherry tomatoes, halved
  • 50g of red onion, finely chopped
  • 30g of fresh parsley, chopped
  • 60ml of olive oil
  • 30ml of balsamic vinegar
  • 1 clove of garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions:

  • Rinse the lentils under cold water and then cook them in boiling water for about 20 minutes or until tender. Drain and let cool.
  • In a large mixing bowl, combine the cooked lentils, cherry tomatoes, red onion, and parsley.
  • In a separate bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the vinaigrette.
  • Pour the vinaigrette over the lentil and tomato mixture and toss gently to combine.
  • Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
