Hearty Lentil Soup with Carrots & Potatoes

Ingredients:

  • 200g of lentils
  • 2 medium carrots, diced
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1L of vegetable broth
  • 100g of diced tomatoes
  • 2 tbsp of olive oil
  • 1 tsp of cumin
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions:

  • Heat the olive oil in a pot over medium heat.
  • Add the chopped onion and minced garlic, sauté until softened.
  • Stir in the diced carrots and potatoes, cooking for about 5-7 minutes.
  • Add the lentils, diced tomatoes, and vegetable broth to the pot.
  • Season with cumin, salt, and pepper, then bring to a boil.
  • Reduce heat and simmer for about 60 minutes or until lentils are tender.
  • Check regularly and add more broth or water if necessary.
  • Once cooked, blend slightly for a creamier texture, if desired.
  • Serve hot, garnished with fresh parsley.
